Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 large bag nacho cheese doritos, 1 lb. ground beef or sausage, 3 c. grated jack/colby cheese, 1 can cream of chicken soup and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook and brown meat; drain.
Stir in soups and Ro-Tel tomatoes, simmering for about 15 minutes, with occasional stirring to prevent sticking.
In medium size cake pan, semi-crush enough Doritos to layer entire bottom of pan.
Over top of Doritos, pour ingredients that have been simmering.
Spread evenly over Doritos. Using the remaining Doritos from bag, semi-crush them and sprinkle over top of mixture in pan.
Spread shredded cheese evenly over top of Doritos.
Bake at 350Β° until cheese is melted.
Makes 6 to 8 servings.
