Mexican Casserole
Mexican Casserole is an easy dinner. Made with 2 pkg. jiffy cornbread mix, 1 c. creamed corn, 1 1/2 lb. ground chuck, 12 oz. salsa and 1 lb. grated mozzarella cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Prepare Jiffy mix according to directions.
Add creamed corn. Place half of mix in greased 9 x 13-inch pan; set aside.
Brown ground chuck and drain well.
Add salsa to ground chuck; simmer 10 minutes.
Spread ground chuck over top of cornbread mix.
Sprinkle cheese over chuck mixture.
Spread remaining cornbread mix.
(Will look thin, but rises.)
Bake at 350Β° for exactly 50 minutes.
