Mexican Broccoli
Mexican Broccoli is an moderately easy dinner. Made with 1 pkg. frozen broccoli, 1 lb. velveeta mexican mild cheese, 1 can cream of mushroom soup, 2 eggs and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook broccoli in 1/4 cup water until tender; drain broccoli.
Beat eggs, then add cream of mushroom soup, melted cheese and milk; blend.
Put broccoli in casserole dish and pour mixture over the broccoli.
Sprinkle Ritz crackers over top.
Bake at 350Β° for 30 to 40 minutes.
