Mexican Breakfast
Mexican Breakfast is an moderately easy Mexican breakfast dish you can prepare in about 1 hour 22 minutes. Made with eggs, strips bacon, cheese, flour tortillas and butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Scramble eggs and set aside.
Cook bacon, crumble and set aside.
On medium-high heat, melt 1 tablespoon of butter.
Place 1 tortilla shell in pan for 30 seconds.
Turn shell quickly.
Put 1/4 of scrambled eggs, 1/4 of crumbled bacon and 1/2 slice of cheese on half of the tortilla shell.
Fold other half of shell over fillings.
Remove from heat.
Makes 4.
