Melon Wedges
Melon Wedges is an moderately easy dinner. Made with 1 cantaloupe or honeydew, 1 small box apricot or orange jello, 1 c. boiling water, 3/4 c. cold water and 1 sliced banana, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut melon in half lengthwise.
Scoop out seeds and drain well. Dissolve gelatin in boiling water.
Add cold water.
Chill until slightly thickened.
Stir in fruit.
Pour into melon halves. Chill until firm, about 3 hours.
Cut into wedges.
Makes 6 servings.
