Meatless Loaf
Meatless Loaf is an moderately easy dinner. Made with 2 c. ground carrots, 1 1/2 c. chopped celery, 1 1/2 c. peas, 1 1/2 c. diced potatoes and 1 tbsp. chopped onion, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Butter a baking dish.
Layer 1/2 of the bread crumbs and then layer 1/2 of the carrots, celery, peas and potatoes.
Add all the onions.
Sprinkle with 1/2 of the salt.
Place another layer of the vegetables and sprinkle the rest of the salt on top.
Beat eggs well and pour over top of vegetables.
Cover with remaining buttered crumbs.
Bake at 350Β° for 1 hour.
