Matt's Favorite Orange Bran Muffins
Matt'S Favorite Orange Bran Muffins is an moderately easy dinner. Made with 5 c. all-purpose flour, 1 tbsp. plus 2 tsp. baking soda, 1 tsp. salt, 7 c. unprocessed wheat bran (uncooked) and 2 c. boiling water, this recipe delivers authentic, satisfying flavors. Combine flour, soda and salt in large bowl.
Make well in center of mixture; set aside.
Combine wheat bran and boiling water in a large bowl.
Stir well and set aside.
Place eggs, buttermilk and chopped orange in a container of an electric blender or a food processor; process until smooth.
Add buttermilk mixture to bran mixture; stir well.
Add sugar, butter and oil.
Stir well and add to bran mixture.
Add buttermilk mixture/bran mixture.
Add dried fruit; stir and mix into flour.
Stir until all dry ingredients are moist.
Cover batter and store in refrigerator up to 1 month.
