Mashed Potato Casserole is an moderately easy dinner. Made with 9 large potatoes (approximately 6 lb.), salt to taste, 1 stick margarine, divided, 6 oz. cream cheese and 1 c. light sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook and mash potatoes.
Add sour cream, cream cheese and 5 tablespoons margarine and milk.
Place in greased casserole; dot with remaining margarine and paprika.
(Can also add shredded cheese.)
Bake uncovered for 30 minutes at 375Β°.
Can make a day ahead and store in refrigerator before baking.
