Mary's Pumpkin Pie
Mary'S Pumpkin Pie is an moderately easy dinner. Made with 1 c. sugar, 1/2 tsp. salt, 2 eggs, slightly beaten, 2 tsp. pumpkin pie spice and 1 (12 oz.) can evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix sugar, salt, eggs and pumpkin pie spice in bowl until smooth.
Stir evaporated milk and pumpkin.
Mix well.
Pour into unbaked 9-inch deep fluted pie shell.
Place in a preheated 425° oven. Bake for 15 minutes.
Reduce heat to 350° and bake an additional 35 minutes or until custard is firm.
Serves 6 to 8.
