Mary's Persimmon Beer
Mary'S Persimmon Beer is an easy dinner. Made with persimmons (enough to fill a 2 gal. crock with a spigot, about 4 doz.), 1 c. sugar and 2 or 3 bunches needles from a pine tree (pine straw), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place pine straw at the bottom of the crock.
Fill crock with whole persimmons, leaving a 3-inch air space at top.
Sprinkle with sugar.
Add warm water to cover.
Let stand for 1 week. Strain free-flowing liquid through spigot and drink. Try it.
