Mary's Mock Sweet Potato Pie
Mary'S Mock Sweet Potato Pie is an moderately easy dinner. Made with 6 medium carrots, 5 medium white potatoes, 3 tbsp. margarine, 3 eggs, slightly beaten and 1/2 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 350°.
Cook carrots; drain well.
Blend in blender or food processor until fully blended.
Pour in bowl.
Do the same with the potatoes.
Add the next 8 ingredients to the carrots and potatoes and stir together well.
Pour in 9-inch pie shells.
Cook at 350° for 30 minutes.
Reduce heat to 300° and continue to cook for 15 more minutes.
Makes 2 (9-inch) pies.
