Mary'S Cookies(Mexican Wedding Cakes) is an easy dinner. Made with 1 c. margarine, 1/2 c. powdered sugar, 2 1/3 c. flour, 1 c. finely chopped nuts and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream the margarine and powdered sugar. Add and mix in the flour, nuts and vanilla. Form into small balls (teaspoon size). Bake on ungreased cookie sheet at 275Β° for 40 minutes or until light brown on bottom. Tops need not brown. Roll in powdered sugar. These freeze well.
Yields 4 to 5 dozen and can easily be halved.
