Marinated Vegetable Salad
Marinated Vegetable Salad is an impressive dinner. Made with 1 1/2 c. cauliflower, 1 1/2 c. broccoli, 1/3 c. vegetable oil, 2 tbsp. cider vinegar and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Bring large saucepan of water to boil.
Add vegetables and boil 1 minute.
Drain.
Place in large bowl.
Add olives.
In small bowl, combine next ingredients.
Mix well.
Pour over vegetables; stir to coat.
Cover and chill at least 30 minutes. (Good overnight even.)
