Marinated Salad
Marinated Salad is an impressive dinner. Made with 1/4 c. olive oil, 1/4 c. rice wine vinegar, 1 tsp. paprika, 3 slices red onion, chopped and 1 avocado, peeled and chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine Greek seasoning and paprika with oils and vinegar in a small bowl.
Mix well.
Add mushrooms and marinate for several hours.
Add onion, tomatoes, avocado, celery and parsley.
Chill 1 hour before serving.
Add olives.
Serve in bowls lined with lettuce leaves.
Serves 4.
