Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, peeled and sliced, 1 onion, diced, 1/2 c. salad oil, 3/4 c. vinegar and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook carrots until medium tender. Drain.
Add onion and green pepper. Mix oil, sugar and vinegar.
Heat until sugar dissolves. Add dry mustard and tomato soup.
