Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 large onion, sliced into rings, 1 green pepper, cut in thin strips, 1 c. sugar and 1 can tomato soup (10 1/2 oz.; undiluted), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Wash and scrape carrots.
Cut or slice 1/4 inch thick.
Cook in boiling salted water; drain.
Combine carrots with onion rings and green pepper in large bowl.
Combine soup, sugar, oil, vinegar, salt and pepper.
Bring to a good boil; stir.
Pour hot mixture over vegetables.
Cover and refrigerate overnight.
