Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 c. sugar, 1/2 c. oil, 1/2 vinegar and 1 tsp. dry mustard, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Clean and cut carrots.
Cook until tender, then cool. Boil sugar, oil, vinegar, mustard, sauce, salt and pepper. Add carrots. Remove from heat and add tomato soup (undiluted) onion (diced), and green pepper (diced). Cover and put in refrigerator. Marinate about 2-3 hours.
Then re-heat and serve.
