Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 onion, sliced, 1 bell pepper, sliced, 1 can cream of tomato soup and 1/2 c. salad oil, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel and slice carrots; boil until tender in salted water. Drain and layer in baking dish with onion and pepper, finishing with carrots on top.
Bring soup, sugar and oil to a boil; pour over carrots and refrigerate.
Will keep a month in refrigerator.
