Mama's Eggplant Dressing
Mama'S Eggplant Dressing is an moderately easy dinner. Made with 1 medium eggplant (peeled and chopped), 1/2 c. onion (chopped), 1/2 c. bell pepper (chopped), 1 lb. roll mild jimmy dean sausage and 1 box stove top "cornbread" stuffing, this recipe delivers authentic, satisfying flavors. First follow directions on stuffing and set aside.
Cook all other ingredients, except for cheese, together until done; add Stove Top dressing into eggplant mixture.
