"Make Ahead" Mashed Potatoes
"Make Ahead" Mashed Potatoes is an moderately easy dinner. Made with 9 large baking potatoes, peeled and cut in chunks, 1/2 c. butter/oleo, softened, 12 oz. cream cheese (room temperature), 1/2 c. sour cream and 1/4 tsp. white pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Place potatoes in a large pot. Cover with water and bring to a boil.
Reduce heat and simmer over medium heat until potatoes are tender. Drain.
Put potatoes in mixing bowl.
Beat with mixer until light and fluffy. Beat in butter and cream cheese (which have been cut in small chunks).
Beat in sour cream, nutmeg, salt and pepper.
Transfer mixture to a heavily buttered casserole dish. Cover with plastic wrap and refrigerate.
Before serving, bring to room temperature, then bake, uncovered, in preheated 350Β° oven for 20 to 30 minutes.
Makes 8 servings.
May be fixed 2 to 3 days ahead.
