Magic Fruit Cake is an moderately easy dinner. Made with 1 pkg. none such mincemeat, 1 1/2 c. water, 2 1/2 c. sifted flour, 1 tsp. baking soda and 2 eggs, lightly beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Break mincemeat into chunks in a medium size saucepan; add water.

Stir over medium heat until lumps are broken up.

Boil 1 minute; stir occasionally.

Butter a 9-inch tube pan or spring pan.

Line with wax paper and butter again.

Sift flour and baking soda.

Combine eggs, mincemeat, condensed milk, fruit and nuts.

Fold in dry ingredients.

Pour in pan; bake slow at 300Β° for 2 hours plus, until center springs back when lightly touched with finger and top is golden brown.

Turn out of pan.

Remove paper. For a richer cake, use two packages of mincemeat quantities of water and other ingredients stay the same.

It makes a big cake and so-so-so good.

Serves 12.
