Sift flour, soda, salt and cinnamon.
Set aside.
Mix oil, sugar and eggs.
Beat well.
Add dry ingredients to first mixture and mix well.
Add carrots, pecans, pineapple, coconut, vanilla and orange rind.
Pour into a greased and floured large size tube or Bundt pan.
Bake at 350Β° until done.
