Lo-Cal Pineapple Cheese Salad Ring
Lo-Cal Pineapple Cheese Salad Ring is an moderately easy dinner. Made with no. 2 1/2 can crushed pineapple, 1 pkg. sugar-free lemon gelatin, 1 pkg. sugar-free lime gelatin, 1/4 tsp. salt and 1 c. cottage cheese (lo-fat), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Drain syrup from pineapple.
Measure and add enough water to make 2 1/2 cups.
Heat to boiling; remove from heat.
Add lemon and lime gelatins and salt.
Stir until dissolved.
Chill until consistency of unbeaten egg whites, then fold in drained pineapple, cheese and almonds.
Pour into 2-quart ring mold.
Chill until firm.
Turn out onto large plate and tuck lettuce frills under edges.
Serve on lettuce.
