Lo-Cal Blueberry Jam
Lo-Cal Blueberry Jam is an easy dinner. Made with 5 c. fresh blueberries or 2 (12 oz.) pkg. unsweetened frozen berries, thawed, 1 (1 3/4 oz.) pkg. fruit pectin powder, 2 tbsp. lemon juice and 3 1/2 tsp. liquid artificial sweetener, this recipe delivers authentic, satisfying flavors. In a saucepan, mash blueberries.
Stir in pectin and lemon juice.
Bring to a boil; boil 1 minute.
Remove from heat; stir in sweetener.
Stir for 2 minutes.
Spoon into jars.
Cool; cover, seal and refrigerate.
Yield
1 1/2 pints.
