Lime Pickles
Lime Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, cut crosswise, 2 c. lime, 2 gal. water, 2 qt. vinegar and 8 c. water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix raw cucumbers in lime and first 2 gallons of water.
Soak for 24 hours; then rinse 3 times.
Soak 3 additional hours in ice and water.
Remove carefully and drain.
Make the syrup.
Stir remaining ingredients together until dissolved.
Pour over cucumbers.
Let stand 3 or 4 hours (or overnight).
Add pickling spice to taste.
Boil 35 minutes and fill jars with cucumbers and syrup.
Leave 1/2-inch headspace and seal jars.
