Lime Icebox Pudding
Lime Icebox Pudding is an easy dinner. Made with 1 (14 1/2 oz.) can evaporated milk, 1 (3 oz.) pkg. lime jello, 1 3/4 c. boiling water, 1/2 c. sugar and juice and grated rind of 1 lemon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Chill evaporated milk overnight.
Dissolve jello in boiling water.
When mixture congeals, stir in 1/2 cup of sugar. Whip until fluffy.
In a large bowl, whip chilled evaporated milk, lemon juice and rind.
Add gelatin mixture. Beat thoroughly until fluffy.
Pour into a 9 x 13-inch pan and sprinkle with mixture of 5 to 6 graham crackers mixed with 2 tablespoons of sugar.
