Light Orange Cheesecake
Light Orange Cheesecake is an moderately easy dinner. Made with 2 envelopes unflavored gelatin, 1 1/2 c. orange juice, divided, 3 strips orange rind, 3/4 c. sugar, divided and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sprinkle gelatin over 1/2 cup orange juice in a blender. Heat remaining cup of juice to boiling and add to blender.
Cover and blend at high speed until gelatin dissolves.
Add orange rind, 1/2 cup sugar, salt, egg yolks, cottage cheese and vanilla.
Cover and blend until smooth.
Pour into large bowl; chill until mixture mounds slightly when dropped from a spoon.
