Light Fruit Pie
Light Fruit Pie is an moderately easy dinner. Made with 1 (3 oz.) pkg. jell-o (peach), 2/3 c. boiling water, 2 c. ice cubes, 8 oz. cool whip, thawed and 1 can sliced peaches, drained and diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Dissolve Jell-O completely in boiling water, stirring about 3 minutes.
Add ice cubes and stir until Jell-O is thickened. Remove any unmelted ice.
Blend in Cool Whip, then whip until smooth.
Fold in peaches.
Chill, if necessary, until mixture will mound.
Spoon into crust.
Chill 2 hours.
