Light Fruit Cake
Light Fruit Cake is an moderately easy dinner. Made with 1 1/2 lb. red and green cherries, 1 1/2 lb. pineapple (white and green), 1 lb. coconut, 1 1/2 lb. shelled pecans and 6 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream sugar and butter.
Add eggs, one at a time; beat well. Add flour, one cup at a time.
Beat well after each addition.
Add flavorings and mix well.
Cut fruit in small pieces and mix with coconut and nuts.
Pour batter over fruit and nut mixture and mix well.
Bake in tube pan.
Start baking at 300° for 45 minutes. Then turn down temperature to 275° for 1 1/2 hours.
This cake can be frozen.
