Light Fruit Cake
Light Fruit Cake is an impressive dinner. Made with 1/2 c. butter, 3/4 c. sugar, 3 eggs, 1 1/2 c. all-purpose flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream butter and sugar until fluffy.
Add eggs and beat well. Blend in ingredients; reserve 4 tablespoons flour to dust fruit.
Beat in milk, vanilla and almond extract until smooth. Combine cherries, raisins, dates, nuts and coconut with the reserved flour.
Batter. Bake in a greased and floured cake mold or loaf type bread pan.
Bake at 275Β° for 2 hours or a cake tester inserted comes out clean. Sprinkle cake with your choice of liquor.
