Lentil Soup
Lentil Soup is an moderately easy dinner. Made with 1 lb. lentils, 10 c. water, 3 to 4 onions, coarsely diced, 4 to 5 cloves and 1 large bay leaf, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Put all in soup kettle, except parsley. Bring to a boil, then simmer gently 1 hour.
Add parsley. Continue at low.
Simmer until lentils are very soft. Crush some lentils to make thicker soup. Serve with boiled frankfurters, or better still, bratwurst, sliced.
Pass red wine vinegar to add to soup at table.
