Lentil Salad
Lentil Salad is an moderately easy dinner. Made with 1 (16 oz.) bag dried lentils, 1 c. chopped italian parsley, 2 medium or 1 large tomato, diced, 1/4 c. diced red onions and 2 cloves crushed garlic, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Cook lentils according to package directions.
Drain.
While lentils are still warm, add vinegar, oil and lemon juice.
Mix well.
Chill for 1/2 hour to 45 minutes.
Add remaining ingredients and chill for at least 1 hour.
Mix occasionally while it is chilling.
