Lentil Pilaf
Lentil Pilaf is an moderately easy dinner you can prepare in about 1 hour. Made with c. chopped onion, carrot, diced, c. chopped celery, c. chopped green pepper and . butter or margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a medium saucepan, saute onions, carrots, celery and green pepper in butter.
Add chicken broth and water; bring to a boil. Stir in lentils and pepper.
Cover and simmer 25 minutes.
Add rice; stir well.
Cover and simmer an additional 20 minutes until rice is tender and liquid is absorbed.
