Preheat

Dissolve gelatin in boiling water and set aside to cool.

Mix together sugar and oil.

Add eggs, one a time, beating well after each addition.

In separate bowl mix together flour, baking powder and salt.

Add flour mixture alternately with gelatin mixture to egg mixture, beginning and ending with dry ingredients.

Beat well after each addition.

Lemon juice, lemon peel and lemon extract. Pour batter into greased and floured 10-inch tube pan.

Bake 1 hour without opening door.
