Lemon Yam Puff

Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.
Peel and mash until smooth.
If dry, add a little hot water.
Add remaining ingredients and beat until light and fluffy.
Transfer to a greased 2-quart casserole dish and bake for 30 minutes at 350Β°.
Serves 8 to 10.
