Lemon Roll
Lemon Roll is an impressive dinner. Made with 4 eggs, 1/4 c. sugar, 1 tbsp. oil, 1 tsp. lemon extract and 4 egg whites, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat egg yolks (save whites) on high until pale and thick.
Add 1/4 cup sugar gradually.
Stir in oil and lemon extract.
Set aside.
Beat whites until foamy.
Add 1/2 cup sugar gradually until stiff.
Fold in yolk mixture.
In separate bowl, combine flour, salt and baking powder.
Add to mixture.
Pour into pan.
Bake at 350Β° for 10 minutes.
Roll cake up and cool.
