Lemon-Rice Soup
Lemon-Rice Soup is an easy dinner. Made with 6 c. chicken broth, 1 c. minute rice, juice of 2 lemons, 3 eggs, separated and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
π¨βπ³ Instructions
Boil broth.
Add rice, salt and pepper.
When rice is cooked, lower to simmer.
In mixing bowl, put 3 egg whites and beat until fluffy.
Add yolks.
Add lemon slowly, beating well.
Add broth, a little at a time, until most is used.
Pour back into pot, stirring well.
