Lemon Rice
Lemon Rice is an moderately easy dinner. Made with 1 c. sliced celery, 1 small onion, chopped, 1/4 c. plus 2 tbsp. butter or margarine, melted and divided, 2 1/2 c. water and 2 tsp. grated lemon rind, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute celery and onions in 3 tablespoons butter in a large skillet.
Stir in water, lemon rind, lemon juice, thyme, salt and pepper; bring to a boil.
Add rice.
Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.
Saute mushrooms in remaining butter in a small skillet until tender; drain.
Add mushrooms to rice mixture; stir well.
Makes 10 servings.
