Lemon Pie
Lemon Pie is an moderately easy dinner. Made with 1 lemon, 2 tbsp.(heaping) cornstarch, 1 c. sugar, 2 eggs, separated and 2 c. boiling water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grate the lemon and squeeze juice.
Mix sugar with the cornstarch.
Add grated lemon rind and juice.
Stir in beaten egg yolks.
Add boiling water gradually, stirring constantly.
Cook over medium heat 2-3 minutes, stirring constantly.
Pour into pie shell.
Cover with meringue made from the stiffly beaten egg whites and 4 Tbsp. sugar.
Seal to edge.
Bake in 350Β° oven for 12-15 minutes or till golden.
