Lemon Moons is an moderately easy dinner. Made with 4 large eggs, 1/2 c. vegetable oil, 1/2 tsp. baking powder, 1 (6 oz.) can unsweetened frozen pineapple juice and 1/3 c. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In mixing bowl, beat eggs, oil, pineapple juice and lemon juice.
Add flour and baking powder; beat well.
Drop by teaspoon on oiled baking sheets and sprinkle with grated lemon rind.
