Divide egg yolks from whites.
Combine egg yolks, water, lemon juice and cornstarch.
Cook mixture over hot water, stirring constantly, until mixture thickens.
Remove and stir in butter, vinegar and lemon extract.
Pour in baked pie shell.
Make meringue out of egg whites and sugar; put on top.
