Lemon Loaf

Preheat oven to 350°. Cream shortening and sugar; add eggs and beat until light and fluffy.
Blend or sift together flour, baking powder and salt; add chopped walnuts and grated lemon rind.
Add dry ingredients to creamed mixture alternately with milk.
Pour batter into a greased 9 x 5-inch loaf pan.
Let stand for 20 minutes.
Bake in a preheated 350° oven for 60 to 70 minutes.
