Lemon Jello Cake
Lemon Jello Cake is an moderately easy dinner. Made with 3/4 c. pineapple juice, 3/4 c. applesauce, 8 egg whites, 1 pkg. reduced fat yellow cake mix and 1 small pkg. lemon jell-o (optional, with or without nutrasweet), this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Coat an 8 1/2 x 11-inch pan with canola oil spray.
Mix applesauce and egg whites in a large bowl.
Stir in yellow cake mix, Jell-O and lemon rind.
Slowly drizzle in pineapple juice.
Using a mixer, beat for 5 minutes. Pour into prepared pan.
Bake approximately 35 minutes or until done.
