Lemon "Icebox" Sandwich
Lemon "Icebox" Sandwich is an moderately easy dinner. Made with 1/2 c. sugar, 2 egg yolks, grated rind of 2 lemons, juice of 2 lemons and 3 egg whites, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix first 3 ingredients.
Cook in double boiler until thick. Cool.
Add lemon juice when mixture is cool.
Beat egg whites, adding 1/2 cup sugar.
Whip 1 cup cream.
Fold together (beaten egg whites and whipped cream).
Line dish (approximate size of an ice tray or a little larger size) with crumbs.
Pour in mixture.
Place more crumbs on top.
Drained cherries may be added for decoration, if desired.
