Lemon Gelatin Salad
Lemon Gelatin Salad is an moderately easy dinner. Made with 1 (6 oz.) pkg. lime jello, 1 c. boiling water, 1 (8 oz.) pkg. softened cream cheese, 1/2 tsp. vanilla extract and 1 can mandarin oranges, drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Dissolve gelatin in water.
In a large mixing bowl, beat cream cheese until fluffy.
Stir in jello mixture.
Beat until smooth. Add vanilla oranges, pineapple, soda and pecans.
Chill until mixture mounds slightly.
Fold Cool Whip in.
Spoon into 13 x 9-inch dish.
Chill for 3 to 4 hours until firm.
Cut into squares and garnish with remaining topping.
Yields 16 to 20 squares.
