Lemon Fruit Cake
Lemon Fruit Cake is an moderately easy dinner. Made with 2 c. sugar, 1 lb. butter, 1 lb. white raisins, 1 qt. shelled pecans and 3 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Dissolve 1 teaspoon of baking soda in 1 tablespoon of warm water.
Separate eggs.
Beat egg whites (egg yolks are not needed). Combine all ingredients.
For color, add 1 small jar of cherries and 8 ounces of candied pineapple.
Place mixture in a stemmed cake pan, lined fully with brown paper that has been well-buttered.
Bake 2 1/2 hours in a slow oven (300Β°).
