Lemon Extract Cake
Lemon Extract Cake is an moderately easy dinner. Made with 1 lb. butter or oleo, 2 1/3 c. sugar, 6 eggs, 1/4 lb. candied pineapple and 1/4 lb. white raisins, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cream butter and sugar.
Add eggs (one at a time), beating well after each.
Add lemon extract and blend.
Sift dry ingredients together and add to creamed mixture.
Add fruit and nuts.
Bake in loaf pan at 300Β° for 1 1/2 hours or in a tube pan 2 1/2 to 3 hours.
I prefer to use a tube pan.
Needs to be made a week or so ahead.
