Lemon Curd
Lemon Curd is an easy dinner. Made with 3 lemons (4 if small), 2 c. sugar, 3 eggs, beaten well, 4 oz. butter or oleo and grated rind from lemons, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Put sugar, eggs, lemon juice, butter or oleo and lemon rind in a heavy pan and stir together.
Bring to a boil.
Turn down heat. Slowly boil for 4 minutes, stirring constantly.
Pour into jars and store in refrigerator.
Use on toast, etc.
