Lemon Cheese Filling
Lemon Cheese Filling is an easy dinner. Made with 3 large eggs, beaten, 2 c. sugar, 1 c. applesauce, 3 lemon rinds, grated and 1 stick margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine all ingredients, except margarine, in saucepan and cook until thick, stirring constantly to prevent sticking.
Then add margarine and set off heat to cool.
Will frost 3 layer cake. Freezes well.
