Lemon Cake
Lemon Cake is an moderately easy dinner. Made with 3/4 c. self-rising flour, 1/2 tsp. baking powder, 2/3 c. butter, 3/4 c. sugar and 2 large eggs, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream butter until texture of mayonnaise.
Gradually add 3/4 cup sugar, then add the beaten eggs and finely grated rind of lemon.
Alternately add flour, baking powder and milk, a little at a time.
Butter pan (loaf pan, 8 1/2 x 4 1/2 x 2 1/2-inch) well and add filling and bake at 350Β° for 40 to 45 minutes.
Cook lemon juice and 1/4 cup sugar until melted.
Prick hot cake with a fork and pour the juice over the cake.
Leave the cake in its tin until cool.
